How To Make Chocolate Chip Cookies

  1. Prepare all the materials.

  2. Divide 200g of butter into 145g + 55g. Put 145g of it into a small pot and prepare to boil it, and cut the remaining 55g into small pieces and set aside. Chop the chocolate and set it aside. Whether the walnuts are raw or cooked, it is recommended to bake them in an oven at 150°C for 10 minutes until fragrant, then let them cool and break them into pieces. Put baking soda + baking powder + salt + all-purpose flour together, mix them evenly, and sift them for later use.

  3. Cut 145g of butter into small pieces and put them into a small pot. Heat it over low heat. After the butter slowly melts, continue to heat it over low heat and stir continuously until the butter boils. When the color starts to turn brown there are many bubbles and a strong nutty fragrance emerges, turn off the fire.

  4. Pour in the remaining 55g of butter while it’s still hot and stir until the butter melts.

  5. Add brown sugar powder to the butter and mix well with a hand whisk. Add vanilla extract and continue to mix well.

  6. Add the egg and yolk and mix well with a hand whisk. Then, manually stir this batter for 30 seconds and let it stand for 3 minutes. Stir for 30 seconds again and let it stand for 3 minutes. Repeat this way for a total of four rounds of stirring and standing. During this process, the batter will gradually emulsify on its own and become smoother and more delicate. This is better than continuously stirring.
