Put the 4 egg whites and egg yolks separately in clean containers. Finally, break the fifth egg into the egg yolks. That is to say, 4 egg yolks plus one whole egg are used as the egg yolk batter.

Put the egg whites in the refrigerator for refrigeration first. Let’s beat the egg yolks with sugar first until well blended. Then add oil, then milk, and finally sift in the low-gluten flour. Stir in a Z shape. During the stirring process, use a spatula to scrape the sides of the bowl many times to avoid uneven oil and milk. In fact, before adding the low-gluten flour, you can use an egg beater. Do you all know? 😄. In any case, beat until it reaches the state as shown in the picture. A delicate silky draping feeling is fine. Be sure to beat evenly. It won’t develop gluten. Beat with confidence. The egg yolk batter is very moist and easy to beat.

Set aside the egg yolk batter. Preheat the oven to 175 degrees Celsius. Then beat the egg whites. Stop immediately when a large hook appears when using the electric mixer. Let’s switch to a hand whisk.

Use the hand whisk to tidy up the egg whites. The egg whites are very delicate and shiny. A curved hook is fine. Do not use brute force. A large curved hook gives a very moist texture. A small curved hook will be a little drier.

Pour it into a 28×28 square baking pan lined with an oilcloth.

Gently tap it a few times and place it in the preheated oven. Set the upper heat to 175 degrees Celsius and the lower heat to 150 degrees Celsius. Bake for about 20 minutes. Specific time depends on your own oven! The cake roll baked at this temperature has a very tender and beautiful towel surface. If your oven cannot adjust the upper and lower heat separately, then bake at 150 degrees Celsius for 20 minutes, and finally use 180 degrees Celsius for coloring.
